Paleo [Pumpkin!] Chocolate Chip Cookies

Cookies are my one true vice (specifically, chocolate chip). While I do love ALL delicious treats, cookies sit at the very top of the list. Thankfully for me, these chocolate chip pumpkin paleo cookies are so satisfying, plus they are made with minimal, natural ingredients! You can’t beat that.

Now, these are not pumpkin pie flavored chocolate chip cookies. The pumpkin adds a hint of flavor, but it's really about the moisture, fiber, and nutrients that the pumpkin adds to the cookies.


Paleo [Pumpkin!] Chocolate Chip Cookies


  • 1 egg
  • 1/3 cup coconut manna or butter
  • 1/2 cup organic pumpkin puree
  • 1/2 cup organic monk fruit
  • 2 tsp pure vanilla extract
  • 2 1/3 cups blanched almond flour
  • 1 tsp baking soda
  • A pinch fine grain sea salt
  • 1 tsp ground cinnamon
  • 1/2 cup Enjoy Life brand dark chocolate morsels*


*  if you would like to make this recipe completely sugar free,  then use a sugar-free chocolate, like this Eating Evolved Midnight Coconut - 100% cacao bar, and break it into small chunks.


Instructions


  1. Preheat your oven to 350 degrees and spray two cookie sheets with avocado oil or line with parchment paper.
  2. In a large bowl, mix together wet ingredients: egg, coconut manna, pumpkin puree, monk fruit and vanilla. Then in a separate mixing bowl mix together the dry ingredients: blanched almond flour, sea salt, cinnamon, and baking soda.
  3. Once the dry mixture is combined completely, gradually mix into the wet ingredients until combined and a cookie dough forms. Lastly, stir in the dark chocolate chips or chocolate chunks.
  4. To let the dough set, stick in the freezer for about 10 minutes or so.
  5. Grab a dough ball with (clean!) hands and press into a ½ thick cookie. Repeat to make 24 cookies and place in even rows on both cookie sheets.
  6. Finally, bake in a preheated oven for about 10-12 minutes or until just set (I went 11 minutes). Remove from oven and (try to) allow cookies to sit for 5 minutes before eating. ENJOY!
