Keto Grain-Free Sugar-Free Blueberry Cheesecake.


You guysss! This cheesecake. is. so. good.

However, I cannot even take credit for making such a delicious treat. My girl Stacey gets all of the praise for this one. However, since I had so many requests for this recipe Stacey gave me the go ahead to share it! 

So the specifics. This cheesecake is:
gluten free: excludes the protein gluten. Gluten is found in grains such as wheat, barley, rye, and a cross between wheat and rye called triticale.
grain free: grain-free is the elimination of all grains including wheat,  rice, corn, barley and oats.  
sugar free: refined sugar comes from sugar cane or sugar beets, which are processed to extract the sugar. It is typically found as sucrose, which is the combination of glucose and fructose.
keto: keto diet is well known for being a low carb and high fat diet, where the body produces ketones in the liver to be used as energy. 
paleo (however, the butter makes it not exclusively paleo): aka. caveman diet. Typically includes vegetables, fruits, nuts, roots, and meat while excluding foods such adairy products, grains, sugar, legumes, processed oils, salt, and alcohol or coffee.



Bulletproof Un-Cheesecake

Ingredients
- 1 cup frozen or fresh organic blueberries
- 4 cups full fat coconut milk - (used Let’s Do Organic coconut cream. It’s Guar gum & BPA Free)
- Up to 4 tbsp stevia or xylitol - (used 3)
- 2 scoops vital proteins beef gelatin*
- 2 tsp vanilla extract
- 4 tbsp unsalted grass-fed butter*
- 1 tbsp brain octane oil
- 2 cups shredded coconut


Instructions
- Heat 1-cup coconut milk, xylitol, and beef gelatin in saucepan over medium heat until the gelatin is dissolved
- Once it's dissolved add the heated milk and the remainder of ingredients in your VITAMIX or blender.
- Blend until combined then pour over blueberries.
- Place in the fridge for 2 hours (or until solidifies).
- Top with any and all of the delicious toppings! blueberries, granola, nuts, almond butter, or whatever else you got!
- Cry into cheesecake because you made something so delicious. Enjoy!

*To make vegan substitute grass-fed butter for your choice of vegan butter, and the beef gelatin for vegan gelatin.
